If you like less heat make sure sure to remove all the seeds and as much of the membrane of the jalapeƱo as possible. This is enough marinade for 2 or so pounds of meat if you are feeding more than the 3 we typically feed.

Cheesy Potato and Ham Soup

Shane came up with this when he wanted a different way to fix a ham steak. The original idea was perhaps some au gratin potatoes and ham, but it has so much sauce (which wasn't too thick) that it's much more a soup. He originally mixed the more liquid ingredients to melt the cheeses on the stove before baking it for 20 minutes. It's makes more sense to to make it as a soup on the stove, or possibly a crockpot.

Easy to assemble side dish, with corn and cream cheese. The pepper salsa adds a nice bit of extra flavor.

Creamy Garlic and Italian Sausage Sauce

I found the base of this recipe on Recipezaar (yes that's my favorite recipe resource). The original was thinner than I liked so I have thinkened it up a bit. I've also decreased the garlic a bit, and increased the cheese to suit our family tastes.

Easy Hearty Chili

This is a hearty chili without tomato chunks. If you prefer chucks of tomato in your chili use diced tomatoes instead of tomato sauce. This is just enough for a lunch for the three of us, but if we need a bit more I'd go to the 22 oz size of tomato sauce. Do not leave out the salt since the little bit really brings out the other flavors. IF you making a large pot to have left overs leave out the salt since chili always gets saltier as it stores.

Easy Pork Bake

This is just like the recipe you find on the back of a Stove Top box, except we use pork rather than chicken and don't premix the stuffing. The others I found on this site that were close do not include the mixed vegetables. Typically though instead of purchasing bags of mixed veggies, we just mix our own from the frozen veggies we have on hand.

Ginger Snaps

I received this recipe from the Prescott Journal which actually called them "Nona's World Famous Ginger Snaps". (By the way 4 tablespoons is equal to 1/4 cup)
